WHere is a home-style version of a drink from a new menu. Designed as a batch premix which is loaded with the essence associated with holiday season, which makes it perfect for a festive gathering. Save the extra citrus syrup to use in brunch beverages, desserts, or for another batch of bikinis.
The Bikini Cocktail
Makes enough for 10 guests
For the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Drink (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
For the Syrup: Place all the ingredients inside a saucepan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Next, remove from the burner and let it to cool completely. Pour into a clean bottle, cap it keeping it in the refrigerator, where it will keep for around one month.
For the Batch Mix: Pour the specified spirits and syrup into one large bottle, let it rest for one hour, then filter it , ideally through muslin, so it's fully clarified.
When ready to serve: Measure 85ml of your premix into your mixing glass packed with ice, gently stirring lightly for about 60 seconds to chill. Pour to a cold coupe glass or similar, garnish with a few cranberries adding the final touch using a light spray of the essential oil over the drink.
